1/4 c butter, room temp
1 c sugar
1 egg
1.25 c unsweetened applesauce
2 c flour
1.5 tsp cinnamon
1 tsp baking soda
1/4 tsp salt
Cream butter and sugar. Add egg and blend. Stir in applesauce. Mix dry ingredients with whisk. Add wet and dry together. Fill muffin cups 2/3 full. Bake at 350 for 15-18 minutes.
